beverage density lab answer key: Caffeine in Food and Dietary Supplements Leslie A. Pray, Institute of Medicine, Ann L. Yaktine, Food and Nutrition Board, Board on Health Sciences Policy, Diana E. Pankevich, Planning Committee for a Workshop on Potential Health Hazards Associated with Consumption of Caffeine in Food and Dietary Supplements, 2014 Caffeine in Food and Dietary Supplements is the summary of a workshop convened by the Institute of Medicine in August 2013 to review the available science on safe levels of caffeine consumption in foods, beverages, and dietary supplements and to identify data gaps. Scientists with expertise in food safety, nutrition, pharmacology, psychology, toxicology, and related disciplines; medical professionals with pediatric and adult patient experience in cardiology, neurology, and psychiatry; public health professionals; food industry representatives; regulatory experts; and consumer advocates discussed the safety of caffeine in food and dietary supplements, including, but not limited to, caffeinated beverage products, and identified data gaps. Caffeine, a central nervous stimulant, is arguably the most frequently ingested pharmacologically active substance in the world. Occurring naturally in more than 60 plants, including coffee beans, tea leaves, cola nuts and cocoa pods, caffeine has been part of innumerable cultures for centuries. But the caffeine-in-food landscape is changing. There are an array of new caffeine-containing energy products, from waffles to sunflower seeds, jelly beans to syrup, even bottled water, entering the marketplace. Years of scientific research have shown that moderate consumption by healthy adults of products containing naturally-occurring caffeine is not associated with adverse health effects. The changing caffeine landscape raises concerns about safety and whether any of these new products might be targeting populations not normally associated with caffeine consumption, namely children and adolescents, and whether caffeine poses a greater health risk to those populations than it does for healthy adults. This report delineates vulnerable populations who may be at risk from caffeine exposure; describes caffeine exposure and risk of cardiovascular and other health effects on vulnerable populations, including additive effects with other ingredients and effects related to pre-existing conditions; explores safe caffeine exposure levels for general and vulnerable populations; and identifies data gaps on caffeine stimulant effects. |

beverage density lab answer key: Strategies to Reduce Sodium Intake in the United States Institute of Medicine, Food and Nutrition Board, Committee on Strategies to Reduce Sodium Intake, 2010-11-14 Reducing the intake of sodium is an important public health goal for Americans. Since the 1970s, an array of public health interventions and national dietary guidelines has sought to reduce sodium intake. However, the U.S. population still consumes more sodium than is recommended, placing individuals at risk for diseases related to elevated blood pressure. Strategies to Reduce Sodium Intake in the United States evaluates and makes recommendations about strategies that could be implemented to reduce dietary sodium intake to levels recommended by the Dietary Guidelines for Americans. The book reviews past and ongoing efforts to reduce the sodium content of the food supply and to motivate consumers to change behavior. Based on past lessons learned, the book makes recommendations for future initiatives. It is an excellent resource for federal and state public health officials, the processed food and food service industries, health care professionals, consumer advocacy groups, and academic researchers. |
beverage density lab answer key: The Ripple Effect Alex Prud'homme, 2011-06-07 AS ALEX PRUD’HOMME and his great-aunt Julia Child were completing their collaboration on her memoir, My Life in France, they began to talk about the French obsession with bottled water, which had finally spread to America. From this spark of interest, Prud’homme began what would become an ambitious quest to understand the evolving story of freshwater. What he found was shocking: as the climate warms and world population grows, demand for water has surged, but supplies of freshwater are static or dropping, and new threats to water quality appear every day. The Ripple Effect is Prud’homme’s vivid and engaging inquiry into the fate of freshwater in the twenty-first century. The questions he sought to answer were urgent: Will there be enough water to satisfy demand? What are the threats to its quality? What is the state of our water infrastructure—both the pipes that bring us freshwater and the levees that keep it out? How secure is our water supply from natural disasters and terrorist attacks? Can we create new sources for our water supply through scientific innovation? Is water a right like air or a commodity like oil—and who should control the tap? Will the wars of the twenty-first century be fought over water? Like Daniel Yergin’s classic The Prize: The Epic Quest for Oil, Money & Power, Prud’homme’s The Ripple Effect is a masterwork of investigation and dramatic narrative. With striking instincts for a revelatory story, Prud’homme introduces readers to an array of colorful, obsessive, brilliant—and sometimes shadowy—characters through whom these issues come alive. Prud’homme traversed the country, and he takes readers into the heart of the daily dramas that will determine the future of this essential resource—from the alleged murder of a water scientist in a New Jersey purification plant, to the epic confrontation between salmon fishermen and copper miners in Alaska, to the poisoning of Wisconsin wells, to the epidemic of intersex fish in the Chesapeake Bay, to the wars over fracking for natural gas. Michael Pollan has changed the way we think about the food we eat; Alex Prud’homme will change the way we think about the water we drink. Informative and provocative, The Ripple Effect is a major achievement. |

beverage density lab answer key: Salt Sugar Fat Michael Moss, 2013-02-26 From a Pulitzer Prize-winning investigative reporter at The New York Times comes the troubling story of the rise of the processed food industry -- and how it used salt, sugar, and fat to addict us. Salt Sugar Fat is a journey into the highly secretive world of the processed food giants, and the story of how they have deployed these three essential ingredients, over the past five decades, to dominate the North American diet. This is an eye-opening book that demonstrates how the makers of these foods have chosen, time and again, to double down on their efforts to increase consumption and profits, gambling that consumers and regulators would never figure them out. With meticulous original reporting, access to confidential files and memos, and numerous sources from deep inside the industry, it shows how these companies have pushed ahead, despite their own misgivings (never aired publicly). Salt Sugar Fat is the story of how we got here, and it will hold the food giants accountable for the social costs that keep climbing even as some of the industry's own say, Enough already. |

beverage density lab answer key: Front-of-Package Nutrition Rating Systems and Symbols Institute of Medicine, Food and Nutrition Board, Committee on Examination of Front-of-Package Nutrition Rating Systems and Symbols (Phase II), 2012-01-30 During the past decade, tremendous growth has occurred in the use of nutrition symbols and rating systems designed to summarize key nutritional aspects and characteristics of food products. These symbols and the systems that underlie them have become known as front-of-package (FOP) nutrition rating systems and symbols, even though the symbols themselves can be found anywhere on the front of a food package or on a retail shelf tag. Though not regulated and inconsistent in format, content, and criteria, FOP systems and symbols have the potential to provide useful guidance to consumers as well as maximize effectiveness. As a result, Congress directed the Centers for Disease Control and Prevention (CDC) to undertake a study with the Institute of Medicine (IOM) to examine and provide recommendations regarding FOP nutrition rating systems and symbols. The study was completed in two phases. Phase I focused primarily on the nutrition criteria underlying FOP systems. Phase II builds on the results of Phase I while focusing on aspects related to consumer understanding and behavior related to the development of a standardized FOP system. Front-of-Package Nutrition Rating Systems and Symbols focuses on Phase II of the study. The report addresses the potential benefits of a single, standardized front-label food guidance system regulated by the Food and Drug Administration, assesses which icons are most effective with consumer audiences, and considers the systems/icons that best promote health and how to maximize their use. |
